Can anyone tell me why my purple icing turns blue by the next day? What am i doing wrong?

Sometimes color deepens as it sits overnight. It is recommended to make your colored icing a day before you actually need it in case it changes and you need to tweak the color.

That happens to me all the time too!! I discovered the secret is to put a little bit of red or pink coloring in there. That offsets the blue tone and makes it purple

Did you use water or milk in your icing?

Sometimes the minerals in the water can change the color in blue and purples. Try milk.

Have u ever noticed that when u take a pic of a purple cake...it looks blue in the photo??? (at least mine do anyway) weird...

Well i always have used water. But if i use milk, will the icing not last as long since milk will sour?

It will keep for two weeks or use then use distilled water. Mineral free.
