HI!
A couple of my friends want me to make "chocolate Chocolate" buttercreams,
I made the filling, but now it WON'T harden! I have had it the fridge.
HELP, what should I do?
I have even added MORE powdered sugar and its STILL too soft for me to
form the balls! I need to be able to form them, so that I can dip them in
chocolate to coat them!

I DON'T want to have to throw it all out!

I don't have any suggestions to get the mixture to firm up. But, rather than dipping them, what if you used a candy mold and made a shell, filled it with the mixture, then sealed the chocolate shell -- kind of like a bon bon? (I am probably not explaining this very well.)

Good suggestion hornk! What recipe did you use? Are you trying to make truffles? You need to use chocolate and cream to make those.

thanks so much for the quick reply!
I had actually just thought of the same idea, but kind of too lazy to make all the shells
and then pipe it in, but I MAY have to do that if I can't come up with another idea!
I WON'T be making them again real quick, thats for sure!
I'll stick to making the guys "truffles"! I made 40 of them and brought
them to my husbands VFW Post and they went so quick, I was shocked!

HI!
this was MY fault! I used TWO recipes and I should have just stuck to the one.
I used Heavy Cream (that was the problem, I think I used way too much) and
butter and cream cheese and vanilla! and cocoa powder!
I should NOT have experimented with these!
I do make truffles and they are so much easier than what I am trying
to make with this "buttercream filling", my truffles never give me any problems!

Hi!
I just went in and checked the "Buttercream Filling", It DID harden enough for me to make about 50 balls!
I have it on lined wax paper pans and BACK into the fridge, over night!
Tomorrow, I'll dip each one and than "hang up my days of making chocolate filling buttercreams, UNLESS I get a good, really good recipe!
I was happy to get them rolled at least!

Take a look here Faye - these are some recipes for candy that Wilton has I have used the first truffle recipe & the truffle recipe at teh back which has the alcohol in them - bothe came out good

About the mixture not hardening, I would put the mixture into the freezer for a few minute for it to harden up !!
