Hi
I'm having a difficult time icing cakes with buttercream icing at the moment in the heat. The UK seems
to be having a heat wave & its causing havoc with my novelty cakes. I read somewhere that meringue
powder stabilises the icing so wondered if this would help.
Any advice greatly received - thanks Penny

For every 2 lbs of icing sugar(powdered sugar) you will need 2 TBSP of meringue powder.

If that doesn't work sufficiently, use a little cornstarch - just enough to thicken it up slightly

Meringue powder will help stabilize the icing, but I hate how it tastes! I think it changes the flavor of the icing. I try to avoid using it. Try making your icing a little stiffer too.
