A pound of powdered sugar equals approximately 4 cups. I say approximately because it makes a big difference whether you sift it first, and how tightly/loosely you pack the cup.

The most accurate way to measure powdered sugar is by weight. For example, I buy mine in 2 pound bags and have converted all my buttercream recipes to use 2 pounds. WooHoo -- no sifting and no measuring!

But if you have to do cup measures, then count 4 cups as a pound and add your liquid gradually so you can adjust it to the amount of powdered sugar you actually have.

eddiesgirl8282, what you've said is a very common misunderstanding. 2 cups equals 16 FLUID ounces, which is a volume measurement, not a weight. (How confusing is that!?) If you are measuring water or most watery liquids then 2 cups (16 fluid ounces) will indeed also weigh 16 avoirdupois ounces. But that does not apply to solids. 2 cups of chocolate chips, for example, weigh 12 ounces. 2 cups of powdered sugar weigh about 8 ounces.

Beware: those fluid ounces marked on your measuring cup only apply to fluids.
