pattycakesbakery 02/26/2011 10:05 PM
need some assistance - if you please.
my buttercream recipie is:
2 sticks butter creamed
slowly add in 1 pound powerdered sugar
mix well
slowly add in 1/4 to 1/2 cup milk depending on consistency.
mix well until fluffy.

sometimes it comes out SUPER sweet. although everyone LOVES it...how do you cut the sweetness?

any help is much appreciated.

Thanks!

You can try adding a little salt to cut sweetness.

To cut down sweetness a couple of things can be done an acid like lemon juice or orange juice can be added and salt. or you can add a litlte bit of shortening (its flavourless) but it should be one that dosen't coat your mouth. Or simply cut down on the sugar and reduce the liquids are else it might curdle up by adding too much liquid.

I add popcorn salt.

I add a little popcorn salt and extra almond flavoring. Sometimes, depending on the cake flavor, I add pineapple juice in place of part of the water. Most people don't taste the pineapple...it just makes it taste less sweet!
