I have noticed that from-stratch cakes using butter get dry when refrigerated because the butter resolidifies. Homemade oil-based cakes (chocolate) and cake mix cakes don't seem to have this problem. Does this happen to anyone else? How can I use fillings that need to be refrigerated and still have a moist cake?
