I've made a fondant covered 2-tier cake (filled and iced with chocolate buttercream) for Course 3. Does anyone know how long will it keep? A friend would like to use it for a birthday party, but its not until Saturday (today is Tuesday). If I keep it refrigerated, will it be ok by then?

You should not put a fondant covered cake in the fridge. It will sweat and look terrible.

It will last non-refridgerated till Saturday - unless you have anything in there that needs to be refridgerated like mousse.

right, dont' refridgerate it. It will keep until Saturday on the counter somwhere. I am going to be covering a cake tomorrow for Saturday. Do it all the time!

Just keep it out of the sun and it will be fine. I have done it many times and it was just fine.
