Forget-Me-Not Cookies

Sweet and dainty, these forget-me-not cookies are a tasty treat to serve alongside a cup of hot tea or coffee. Decorated using royal icing, these cookies dry hard, so they lend themselves well to storage and packaging. A lovely treat to serve at a bridal shower or for Mother’s Day, these cookies are simple, yet elegant.

  1. One day before, bake cookies. Prepare cookie dough following recipe instructions. Using rolling pin, roll out to 1/8 in. thickness.

    Using “C” round cutter, cut out cookies. Bake and cool.

  2. Tint icing for flowing. Prepare royal icing following recipe instructions. Using Juniper Green icing color, tint 1/2 cup white icing light green. Using Delphinium Blue icing color, tint ½ cup white icing light blue.

    Tint 1/2 cup white icing light coral using color combination provided. Combine Pink and a touch of Lemon Yellow icing colors for light and medium coral color shown. Combine Royal Blue and Violet icing colors for medium blue color shown. Combine Golden Yellow and Lemon Yellow for yellow color shown.

    Thin light blue, light green and light coral icing to 18 drop count.

    Reserve remaining white royal icing.

  3. Ice cookies. Prepare 3 decorating bags, separately, with light green, blue and coral icing. Cut 1/4 in. off tip of each bag.

    Outline and fill in cookies with thinned icing. Let dry, about 4 to 6 hours.

  4. Tint icing for flowers. Tint 1/2 cup reserved white royal icing each medium coral and medium blue using color combinations provided. Tint 1/4 cup yellow using color combination provided.

    Reserve remaining icing white.

  5. Pipe forget-me-nots. Prepare 3 decorating bags with tip 101; fill separately with medium coral, medium blue and white icing.

    Prepare decorating bag with tip 2; fill with yellow icing.

    Using icing squares, flower nail and forget-me-nots technique, pipe medium coral, medium blue and white flowers. Transfer flowers, on icing squares, to cake board to dry, about 2 to 4 hours.

  6. Decorate cookies. Using small amount of remaining icing, attach forget-me-nots to cookies.
