About one week in advance: Make panels. Roll out gum paste
1/16 in. thick. Use pattern to cut out 77 full panels. Make extras
to allow for breakage and let dry 24 hours on cornstarch dusted
boards. Thin royal icing slightly. Using cut parchment
bag, pipe 231 Puddle Dots 3/8 in. diameter on waxed
paper-covered boards. Let dry 24 hours.
Mix 8 oz. fondant
with 8 oz. gum paste; tint burgundy. Roll out 1/16 in. thick.
Use pattern to cut 77 inner panels. Attach over white panels
using damp brush. Let dry 24 hours. Use toothpick to transfer
scroll pattern details to panels. Decorate with full-strength
royal icing. Pipe details using tip 1 scrolls, dots and fleur-delis.
