For round gelatin mold, in mixing bowl, mix seven 3 oz. pks. of lemon with 4 pks. of unflavored gelatin; add 7 cups boiling water and stir until dissolved; add 5 cups cold water. Chill until slightly thickened (about 1 1/2 to 2 hours). Beat in 8 oz. non-dairy whipped topping with thickened gelatin. Pour into round pan lightly sprayed with Bake Easy spray. Refrigerate overnight. For Elmo, mix two 6 oz. pks. of strawberry with 2 pks. of unflavored gelatin; add 4 cups boiling water and stir until dissolved; add 3 cups cold water. Pour into Elmo pan lightly sprayed with vegetable pan spray. Refrigerate overnight. Cut cake board to fit Elmo and wrap with foil. Unmold Elmo onto board and decorate. Using vanilla whipped topping, outline mouth with tip 6; pipe in tip 12 whites of eyes, tip 10 nose, tip 6 mouth and pupils; smooth areas with small spatula.
