Step 1

3 DAYS IN ADVANCE

Make fondant drum set and sticks. Knead 1 teaspoon Gum-Tex into 8 oz. white ready-to-use rolled fondant. Tint 2 oz. Christmas red/red-red combination (for red) and 1 oz. brown. Reserve remaining white.

For drum set, use 20 in. fondant roller with orange guide rings to roll out white fondant 1/8 in. thick. Use knife and pattern to cut out entire drum set, including cymbal, and stand in one piece. Carefully move to cornstarch-dusted board. Let dry 48 hours.

Roll out red fondant 1/8 in. thick. Use knife and pattern to cut out rims and bolts. Use damp brush to attach to drum set. Use silver Pearl Dust/lemon extract mixture to paint cymbal and stand. Let dry 24 hours.

For sticks, roll brown fondant into two logs, 5/16 in. dia. x 4 1/2 in. long. Let dry 48 hours on cornstarch-dusted board.

Step 2

1 DAY IN ADVANCE

Bake and cool monkey cake. Cake is one layer, 2 in. high. Place cake on foil wrapped board, cut to fit, including a front drum area of 6 1/2 in. x 2 1/2 in. deep. Use knife to trim muzzle and eyes level with face and to trim tail, leg and left foot level with tummy.

Step 3

Ice areas smooth. Prepare buttercream icing following recipe directions. Tint portions violet/rose combination (for violet), leaf green/lemon yellow combination (for green), golden yellow/lemon yellow combination (for yellow), copper (for skin tone shown) and black. Use spatula and violet icing to ice cake sides and background areas smooth. Use spatula and black icing to ice mouth area smooth.

Step 4

Decorate cake. Use tip 3 and skin tone icing to outline head, mouth and hands. Use tip 16 and skin tone icing to fill in head and hands with stars. Use tip 16 and green icing to fill in shirt with stars. Use tip 18 and yellow icing to pipe pull-out star hair.

Use tip 3 and black icing to pipe in eyes, outline eyebrows and to outline and fill in musical notes. Pat smooth with finger dipped in cornstarch. Use tip 20 and violet icing to pipe shell bottom border.

Step 5

DAY OF CELEBRATION

Assemble cake. Position drum set, using marshmallows for support as needed. Use tip 3 and black icing to pipe outline accents on drums.
