Several days in advance: Make flowers. Combine 1/2 teaspoon of Gum-Tex with 6 oz. of fondant; roll out 1/8 in. thick. Using cutters from Floral Collection Set, cut 12 apple blossoms and 24 forget-me-nots. Place flowers on thick foam and cup centers with dog bone tool; let dry on cornstarch-dusted board. Add tip 3 dot centers in royal icing.
Ice 2-layer 9 and 15 in. cakes smooth with buttercream icing and prepare for
Stacked Construction. Roll out fondant 1/4 in. thick. Using patterns, cut six each Smooth and Swirled Fondant pieces for cakes. Imprint swirled pieces using Spiral Pattern Roller. Attach a swirled piece to each smooth piece with damp brush. Position pieces on cakes. Lightly brush with Pearl Dust. Pipe tip 1 "S" scrolls around bottom edge of fondant. Attach a forget-me-not at bottom point of smooth pieces on 9 in. cake; attach an apple blossom to bottom points of smooth pieces on 15 in. cake. Pipe tip 5 bead below each flower. Pipe tip 3 beads over fondant seams on cake tops. Pipe tip 5 bead bottom borders on both cakes. With tip 3 dots, attach a cluster of 1 apple blossom and 2 forget-me-nots at each bottom corner of 15 in. cake.
At reception: Wrap craft circle in foil and place in Crystal-Look Bowl. Position silk flowers. Position pick by inserting into cake top.**
