Deep pink daisies in full bloom wake up this dainty floral trimmed cake. The new Wilton Gum Paste Flower Cutter Set includes complete instructions for making these dramatic daisies, which are highlighted with brushstrokes of Color Dust.

Step 1

Three to four days in advance: Make gerbera daisies. For centers follow Daisy instructions from Cutter Set on 22-gauge wires in assorted lengths: one 6 in., two 9 in., one 11 in. and three 12 in. Let dry 24 hours. Tint 8 oz. gum paste burgundy. Use small and large cutters and instructions from Gum Paste Flower Cutter Set to make seven gerbera daisies. Let dry 48 hours.

Step 2

One day in advance: Mold fondant flowers. Use Nature Mold to make 56 each medium and large white flowers for cake sides. For flower centers, tint 2 oz. fondant yellow. Roll out 1/16 in. thick. Cut using small end of tip 6 for medium flowers, small end of tip 10 for large flowers. Attach centers using adhesive. Let dry on cornstarch-dusted waxed paper covered boards.

Step 3

Bake and cool 3-layer cake. On same-sized foil-wrapped double cake circles, spatula ice cake top smooth and ice sides using tip 789, smooth side up. Attach three top rows of flowers, alternating sizes, using tip 6 dots of icing. Position top row so that 1/3 of flower extends above cake.

At reception: Position on cake stand. Attach bottom row of flowers, extending 1/3 of flower below cake edge. Tape daisy stems together and insert in dowel rod; secure with ball of fondant if necessary. Insert in cake top and arrange flowers.
