Shaped like little sparkling pumpkins, these mini pumpkin cakes are topped with melted Candy Melts candy and sparkling sugar. Add a cute jack-o-lantern face for Halloween, or serve them as is at your Thanksgiving dinner. No matter what the occasion, mini fall desserts like these are sure to get you in the spirit of autumn!
Bake and cool mini cakes in 12-cup mini muffin pan. Use a serrated knife to trim bottoms so cakes sit level.
Coat bottoms. Melt orange Candy Melts candy according to package directions. Use spatula and melted candy to to ice bottoms of cakes smooth. Place candy side up on parchment paper-covered cookie sheet. Chill until firm, 5 to 10 minutes.
Cover tops. Place cakes, candy side down, on cooling grid set over parchment paper-lined cookie sheet. Use melted candy in cut candy decorating bag to cover cakes. Tap to settle. Use spatula to transfer cakes to parchment paper-lined cookie sheet. Immediately sprinkle with orange sugar. Chill until firm, 10 to 15 minutes.
Attach stem. Use a dot of melted candy to attach spice drop to top. Chill until firm, 3 to 5 minutes.
