Step 1

3 days In advance: Make three gum paste roses using large rose cutter and directions from cutter set.

Step 2

Also: Cover base board. Using second largest pan from set as a guide,cut board 3/4 in. larger than pan all around perimeter. Prepare and cover with 24 oz. black fondant. Reserve remaining fondant.

Step 3

Bake and cool 2-layer cakes. Prepare and cover with black fondant; reserve excess fondant. Prepare for stacked construction.

Step 4

Use small and large triangle patterns to mark triangle sections on front and back of top and bottom tiers. Roll out white fondant 1/8 in. thick. Use medium triangle pattern to cut two triangles; attach to middle tier, front and back.

Step 5

Pipe tip 2 cornelli lace over cake sides between triangles; use white icing on top and bottom tiers, black icing on middle tier.

Step 6

Using black icing, pipe tip 3 bead bottom borders; pipe tip 2 bead borders on remaining sides of all triangles. Use global mold to make four white and two black 4-petal flowers. Attach to triangles using damp brush. Use contrasting icing and tip 1 to decorate flowers with outlines, beads and dots.

At reception: Place roses in flower spikes; insert in cake top.
