Coconut Spritz Cookies Recipe


Coconut Spritz Cookies offer a flavor variation everyone will love. Press the dough into the traditional bar shape, or choose other disks to add variety to your dessert tray.
Makes: About 6-7 dozen cookies. Each cookie serves 1.

Step 1

Preheat oven to 375°F. In large bowl, cream butter and sugar with electric mixer until light and fluffy. Beat in egg, coconut, and vanilla. Combine flour and baking powder; gradually add to creamed mixture. Mix just until combined. Place dough in cookie press and with desired disk press cookies onto ungreased cookie sheet. Bake 10-12 minutes or until edges are lightly browned. Cool on cookie sheet on rack 2 minutes; remove from cookie sheet and cool completely.

Rated 5 out of 5 by from excellent, quick Spritz cookie. used coconut extract and substituted dessicated coconut for the shredded - worked perfectly. Used a star tip to make a star "rope," then sliced in pieces. about 30 slices a pan/220 a batch.

Rated 5 out of 5 by from Good cookies if you love coconut! I added 1 teaspoon coconut flavoring and they are great. Chopping the coconut makes it easy to go through press. Finished cookies have a macaroon taste. I recommend this recipe.
