Coconut Pineapple Cupcakes Recipe
Two tastes of the tropics come together in our Coconut Pineapple Cupcakes. Just ice and add a sprinkle of coconut or crushed pineapple on top!
Makes: About 18 standard cupcakes. Each cupcake serves 1.

They tasted ok except for the dryness, but I didn't use them because I was afraid the guests would pick it up and feel how heavy it was and not want it. I was really excited to try this recipe but I don't think I will risk it again. Instead I used a vanilla box mix and added a cup of coconut and 3/4 c pineapple and they were delicious.

Rated 5 out of 5 by cupcake carol from This is an excellent recipe!! Very moist and easy to make. The only thing I would change is to add a little bit more pineapple if you are craving a pineapple flavor. I've used this for birthday's, conformations, and all occasions. Kids love it!!
