Step 1

Before starting, please read a helpful hint from the Wilton decorator who made this cake.

One day in advance, make wild roses in rose royal icing. Pipe 40 wild roses with tip 102 and 13 with tip 104. Pipe pull-out centers with tip 2 and white royal icing. Make extras to allow for breakage and let dry overnight on wave flower formers.

Step 2

Bake and cool two-layer cake in square pan. Position on a foil-wrapped cake board.

Step 3

Ice cake smooth in rose buttercream icing.

Step 4

Pipe tip 12 outline bottom border in white buttercream icing.

Step 5

Starting at bottom, pipe tip 366 leaves around base of cake, in 2 in. high rows in white buttercream icing.

Step 6

Attach tip 102 wild roses at top edge of leaf rows with tip 2 dots of buttercream icing.

Step 7

Position nine tip 104 wild roses on cake top, in a square formation. Attach remaining four tip 104 wild roses on square of roses with tip 2 dots of buttercream icing.

The wild rose is a pretty year-round flower piped about the size of the head of Flower Nail 7. For a more cupped shape, increase the angle you hold the tip.

A variety of leaves will help give your cakes a more realistic garden feel. Add piping gel to your icing to help keep your leaves from breaking.

Update the classic leaf border with added lushness. Build rows of graceful foliage from the bottom of your cake, leading to a row of your favorite flowers.

Pipe dots for flower centers, faces, figure piping and border effects. When making large dots, lift the tip as you squeeze to allow icing to fill out completely.

Characters or designs are often outlined first, then piped in with stars or zigzags. Outlines can also be used for facial features.
