Step 1

In small saucepan, whisk together sugar, flour, salt, half & half and egg yolks until smooth. Heat over medium heat until mixture is thickened, about 5 minutes, stirring constantly with a spoon or rubber spatula. Remove from heat; stir in vanilla and chocolate. Continue stirring until chocolate is melted. Cool quickly. To prevent a skin from forming, brush surface with melted butter. Stir before using. Fill cupcake.

Rated 5 out of 5 by from The first time I made this I needed to double the recipe for the cake I was making. I wanted to make it one batch at a time incase I didn't like it. So here is what I learned: -first batch: I put all the ingredient in the sauce pan ( except the vanilla extract and chocolate)put it over heat and then started to combine it. I stirred about every 2 minutes. As soon as it thickened I took it off the heat and added the rest of the ingredients as told.I had to scrape it out of the pan. It ended up having lumps but still tasted good so I decided to follow through and make the second batch, figuring I could use a stand mixer to fix it. -Second batch: Again, I put all the ingredient in the sauce pan ( except the vanilla extract and chocolate) but instead combined it before putting it over the heat. I stirred every minute. Like before, as soon as it thickened I took it off the heat and added the rest of the ingredients. It fell out of the pan(no scraping necessary) and didn't have lumps. Because I had two batches I put them both in a stand mixer fitted with a whisk and combined them on high. All of the lumps from the first batch came out and I was left with a fluffy filling ready to use. I hope this helps!(: good luck!

Rated 5 out of 5 by from This chocolate filling recipe was a huge success! Everyone loved the taste and texture, it was smooth and creamy. There was just enough of the semi-sweet chocolate to offset the sweetness of the butter cream icing. It was so easy to make, just remember when you're cooking the filling to let it cook at a high enough temperature to allow it to thicken, also, don't try substituting the half and half for milk.
