Step 1

Preheat oven to 350ºF.

Step 2

In medium bowl, combine flour, baking soda and salt. In large bowl, beat butter and sugars with electric mixer until light and fluffy. Add eggs; mix well. Add flour mixture to butter mixture; mix well. Stir in chips. Drop by tablespoonfuls onto ungreased cookie pan.

Step 3

Bake 11-13 minutes or until edges are golden brown. Cool 3 minutes on pan; remove and cool completely on cooling rack.

I placed cookie dough in refrigerator until cold (about 5-10 mins), and then back each time until ready to palce on cookie sheet, easier to handle. Instead of dropping cookies, I roll into a ball and place about 1-inch apart, makes for rounder cookies. I also change the chips (always choco chip, but instead of butterscotch, try peanut butter, or white chocolate chips), depending on what my family wants me to make.
