On the Wilton web site you can click on Wilton decorating classes. They list Michael's on Hwy27 as giving classes and Jo Ann Fabrics in Winter Garden. You might check with these places. Good Luck
My son had an "under the sea" themed room so I decided to make his first birthday cake that way as well. It was my first attempt and a tiered cake and I think it went over quite well. Everyone still talks about it and he is now 3-1/2.
