Step 1

2 DAYS IN ADVANCE

Prepare base board. Tint 36 oz. fondant rose. Prepare and cover base board with 24 oz. rolled fondant. Reserve excess fondant.

Step 2

Prepare cake top cross. Add 1 teaspoon Gum-Tex to 4 oz. white fondant. Use 9 in. fondant roller with purple guide rings to roll out 1/8 in. thick. Use pattern to cut out large cross. Place on cornstarch-dusted board. Use 9 in. fondant roller with pink guide rings to roll out 6 oz. of reserved rose fondant 1/16 in. thick. Use pattern to cut out small cross. Attach over large cross using damp brush.

Step 3

Decorate cake top cross. Prepare royal icing following recipe directions. Tint rose. Decorate chain link design. Let dry 48 hours. Reserve excess fondant.

Step 4

1 DAY IN ADVANCE

Make blossoms. Roll out reserved rose fondant 1/8 in. thick. Use ejectors from gum paste flower cutter set to make 42 small blossoms and one large blossom. Let dry overnight on cornstarch-dusted boards. Reserve excess fondant.

Step 5

Bake and cool 6 in. and 10 in. square cakes. Cakes are 4 in. high (two layers, 2 in. high). Prepare buttercream icing following recipe directions. Prepare and cover cakes with white rolled fondant. Prepare for stacked construction. Stack cakes on prepared base board.

Step 6

Make center strip inlay for front of cake. Mark strip area, 1 1/2 in. wide, across front of cakes from bottom of 10 in. cake to top midpoint of 6 in. cake. Use sharp knife to cut through fondant in strip area; remove fondant. Roll out 6 oz. of reserved rose fondant 1/16 in. thick. Cut a strip, 1 1/2 in. wide x 12 in. long. Inlay rose strip where white fondant was removed. Reserve excess rose fondant.

Step 7

Make large flower. Roll out remaining rose fondant 1/8 in. thick. Use large rose leaf cutter from gum paste flower cutter set to cut 18 petals. Place on thick shaping foam and mark center line using small end of veining tool from 10-pc. gum paste/fondant tool set.

Use damp brush to attach 10 petals to front of 10 in. cake for back layer of flower.

Attach four petals for middle layer. Attach remaining petals for top layer. Use damp brush to attach large blossom for center.

Step 8

Pipe details. Use tip 3 and white buttercream icing to pipe bead bottom borders.

Mark the center strip inlay for chain link design as for cake top cross. Use tip 3 and rose royal icing to pipe chain link design, ending at top edge of 10 in. cake. Let dry, 1 to 2 hours.

Step 9

Highlight areas. Use brush and white Pearl Dust/lemon extract mixture to paint all rose areas. Let dry, 10 to 15 minutes.

Step 10

Attach small blossoms. Use tip and rose royal icing dots to attach small blossoms to ends of all V shapes on cake top cross and center inlay. Attach a pink Sugar Pearl to each small blossom center.

Step 11

DAY OF CELEBRATION

Position cake top cross. Use melted candy to attach lollipop stick to back of cross, leaving 4 in. extending at bottom. Chill until firm, 3 to 5 minutes. Insert cross.
