Color-dusted briar roses in gum paste are complemented by brush embroidery flowers on the sides of this unique bouquet cake. Frame the cakebases with contrasting fondant bands molded in the Fabric Fondant and Gum Paste Mold.
Three days in advance: Make gum paste
flowers and leaves following instructions in Gum
Paste Flower Cutter Set. Make 16 briar roses.
Brush petals with White Pearl Dust, edges
with Deep Pink/White Color Dust, dip centers
in Chocolate Brown Color Dust. Tape 22-gauge
wire, 6 in. long, to each flower. Tint 8 oz. gum
paste moss green. Make 20 hydrangea leaves;
reserve excess gum paste. Brush with Lime
Green/Spruce Green Color Dust.
Also in advance: Make red
panels. Tint 20 oz. fondant red/burgundy; knead
in 1 teaspoon Gum-Tex. Roll out 3/8 in. thick. Cut
1. in. wide strips: four 7 in. long for top tier, four
11 in. long for bottom tier. Let dry three days
on cornstarch-dusted waxed, paper-covered
Finally in advance, make Top Scroll: Tape pattern to board and cover with waxed paper. Dust with cornstarch. Roll reserved moss green gum paste into 3/8 in. diameter logs. Arrange over pattern. Let dry 2 days. Attach Lollipop Stick to end using melted green candy; let 3 in. of stick extend at bottom to insert into cake. Let set.
Prepare and cover square
boards with rolled fondant. Starting
1 1/2 in. up from bottom, lightly mark floral pattern
on front-facing cake sides using medium flower
Cut-Out and large and medium blossom ejectors
from Gum Paste Cutter Set. Use toothpick to
mark connecting vines and tendrils. Tint thinned
royal icing burgundy. Outline imprint with tip 2
in royal icing; immediately brush lines inward
using Brush Embroidery technique using square tipped brush. Continue, working
one flower at a time. Cover marks for vines and
tendrils with tip 2 outlines. Position cakes on
covered boards. Attach red panels using melted
red candy. Position panels 1/4 in. away from
cake sides; hold upright until candy sets.
20 oz. fondant medium pink. Use Fabric Mold to
mold outer ribbon pieces. Use fondant adhesive
to attach ribbons over center of red panels,
trimming ends as needed. Position pillars and
6 in. plate on 8 in. cake. Arrange flowers using
flower spikes; insert two briar roses and two or
three leaves in each spike.
At reception: Assemble cakes with round plates
and twist legs. Push flower spikes with flowers
into cake. Insert scroll.
* Combine Pink with a little Violet for light pink fondant
