Step 1

2 DAYS IN ADVANCE

Make owl. Tint fondant balls in the following sizes: 1 1/8 in. medium brown, 1 in. brown/red-red combination (for dark brown), 1 in. light brown and 3/4 in. black. Reserve a 3/4 in. ball of white. Knead 1/8 teaspoon Gum-Tex into medium brown.

Use 9 in. fondant roller with purple guide rings to roll out medium brown fondant 1/8 in. thick. Use largest oval Cut-Out to cut body. Use medium round Cut-Out to cut head. Use same Cut-Out to cut a curve at top of body, 1/4 in. from edge, to fit head. Position head in cut area. Use damp brush to secure. Use narrow end of medium leaf Cut-Out to cut two horns, 1/4 in. long; reverse one for opposite side. Use damp brush to attach to head.

Use 9 in. rolling pin with pink guide rings to roll out light brown fondant 1/16 in. thick. Use medium oval Cut-Out to cut belly. Use narrow end of tip 12 to imprint semi-circles for feathers. Attach belly to body.

Step 2

Make owl wings and facial details. Roll out dark brown fondant 1/8 in. thick. Use medium leaf Cut-Out to cut two wings; reverse one for opposite side. Attach to body, narrow end down.

Roll out white fondant 1/16 in. thick. Use narrow end of tip 2A to cut two eyes. Attach.

Roll out black fondant 1/16 in. thick. For glasses, use narrow end of tip 1A to cut two circles. Use narrow end of tip 2A to cut away centers. Attach side by side around eyes. For earpieces, use knife to cut two black strips, 1/16 in. wide x 1/4 in. long; attach. Roll tiny black balls for pupils; flatten slightly and attach. Use narrow end of medium leaf Cut-Out to cut light brown beak, 1/4 in. long. Attach to head. Let owl dry 24 hours on parchment paper-covered cake board.

Step 3

DAY OF CELEBRATION

Bake and cool 13 cupcakes. Prepare buttercream icing following recipe directions. Use spatula to ice tops smooth. Position cupcakes on stand. Insert picks from graduation cupcake combo in all except top cupcake. Reserve one cap pick for owl.

Step 4

Complete owl. Cut lollipop stick to 5 in. long. Melt light cocoa Candy Melts candy according to package directions. Use melted candy to attach stick to back of owl, leaving 1 1/2 in. extended at bottom to insert into cupcake. Chill until firm, 3 to 5 minutes.

Trim toothpick off the reserved cap pick. Use piping gel to attach cap to owl. Insert owl in top cupcake.
