petals. Chill until
firm. Unmold onto
soft cloth. Attach
plastic dowel rod
to back of flower
7 1/2 in. at bottom. Position
coupler ring as a
of dowel rod and
flower to create a slight gap; this will enable
you to insert dowel rod in center post on cake
without dislodging flower. Chill until firm.
Remove coupler ring.
Make flower stem. Brush tall
center post from towering tiers set above wide
ridge with melted green candy. Refrigerate
until firm on waxed paper-covered board.
Make candy leaves. Brush back of clean,
dry lemon leaves with melted green candy.
Refrigerate until firm. Carefully peel off leaves
for reuse; you will need 90 candy leaves.
Divide cake into 16ths, marking top and
bottom. Attach feet, center post foot and short
center post to 14 in. plate; position cake. Pipe a
tip 1D (serrated side up) stripe at each division
For mini ball ladybugs, pipe tip 3 wing
line. Cover cakes with tip 16 stars. Pipe tip 12
ball head. Pipe tip 2 outline mouth. Attach
candy eyeballs and licorice antennae with icing.
Pipe tip 2 dot antenna ends.
Insert flower stem post into short center post.
Attach candy leaves to base of cake with icing
and to stem with melted candy. Insert flower
into center post. Position ladybugs on cake top.
The star tip creates the most celebrated, easily accomplished decorations! The serrated edges of the star tip make ridges in the icing as you squeeze it out. Because fill in requires so much piping from the same bag, keep replenishing icing in bag.
