You may be familiar with Wilton, but did you know that there is a Wilton School of Cake Decorating and Confectionery Art located in Darien, Illinois? The most exciting news for the school is that we will be expanding with a second classroom in 2013!

Students asked for baking classes, so that’s what we’re giving them! You will have the opportunity to attend hands-on classes to learn, ask questions, taste and create delicious recipes when you take a new baking class. New baking classes include cupcakes, cookies, pies, tarts, doughnuts, cakes and even bread making.

In 2012, the school offered 50 classes, but in 2013 we will be increasing to 120 different classes. Take a look at all of your new class choices here. Our most comprehensive and popular class is The Master Course – two weeks of supervised learning ending with a fully decorated three-tiered display wedding cake as the final project.

A very popular trend today is fondant modeling. The school offers an Introduction to Fondant Modeling course where you can learn how to hand-shape fondant into figures such as lions, bunnies, elephants and an adorable boy with a playful puppy. There is also more comprehensive fondant modeling three-day classes like the Bride and Groom class or Fondant Modeling for the Holidays.

For those decorators looking to take their skill to the next level, we have a variety of Isomalt classes like Introduction to Isomalt Design and Advanced Isomalt Flowers. We also have incredible Sugar Classes like Introduction to Sugar Artistry and advanced classes like Advanced Sugar Blowing where you will learn how to pour, pull, stretch and even blow sugar and to create flowers and leaves.

Wilton has been teaching cake decorating for nearly 85 years and is the expert in the cake decorating world. The school mission is to provide excellence in cake decorating education for technique mastery and inspire creativity by their school graduates.

Students have traveled from more than 100 different countries and all 50 states to attend classes at the famous Wilton School. Our shortest course is a three-hour workshop and the longest is a 67 hour certificate class known as The Master Course. People have traveled across the world to take this course – even as far as a 24-hour flight from Australia, Manila, Sri Lanka or Kuala Lumpur, just to name a few. That’s a lot to say for a school and the skills you learn during your visit here!

Age has no barriers. We have had students who were as young as 11 when they enrolled, and many have gone on to lead a lucrative career in the culinary profession. At the school we instill a solid foundation, the stepping stone to broaden a student’s perspective of what is available to them in the Art of Cake Decorating and beyond. It is in our classroom that the students decide how they will form a new career, business or hobby in cake decorating.

Some interesting facts about The Wilton School:
- The school was founded by Dewey McKinley Wilton. Mr. Wilton began his career in 1912 as a candy maker.
- In the 1920’s he traveled internationally teaching pulled sugar and in turn was taught the time-honored tradition of the art of cake decorating.
- Over the years, Mr. Wilton formulated his own technique, “The Wilton Method,” combining the best of the past and present European artistry with an American desire for excellence and simplicity.
- The school continued to evolve under the direction of Dewey and his son, Norman. This evolution of the school eventually advanced into including the sale of cake decorating products.

Sandy Folsom Sandy is the Director of the The Wilton School. Sandy has been teaching professional cake decorating classes for over 25 years, 18 of those with Wilton. Internationally, she has shared her expertise with well-known professionals and enthusiastic students in Brazil, Colombia, Mexico and Taiwan. Folsom had the opportunity to work side by side for 10 years with Wesley Wilton, the youngest son of Dewey McKinley Wilton, founder of Wilton Industries. Sandy's students describe her as "patient, fun and a great instructor."

      There is only one Wilton School of Cake Decorating, located in Darien, Il. We have just expanded and renovated our teaching facility. We have 2 classrooms. Our Sugar classes are the only classes that have an age requirement of 18 years. I hope you will sign up for one of our classes soon.

    I would love to attend your school of baking and decorating. I have been a cake decorator for the last 6 years and I love it greatly.     I took the Master Course in 1994. When I first walked in the class-room and saw the cakes on display, I thought to myself “there is no way I can learn how to do this.” But with Sandy Folsom’s patience and encouragement….I DID! I went on to working six years in an Italian family-owned bakery (catering wholesale) where I became head decorator, baked and sold cakes at home, and also became a Wilton instructor at a local card/party store. Sandy is an incredible teacher who made a tremendous impact on my life. Do not hesitate to sign up for one (or more!) of her classes.

      We have had several students from Nigeria who have taken many classes. Check our 2013 schedule as well as 2014 http://www.school.wilton.com for the classes you are interested in taking. Pick a Master class in the month that suits your schedule and then select as many optional other classes around that Master’s that interest you. I am sure you will find at least 4-6 weeks of classes including baking cakes & breads that will be of interest to you.

    I have a few questions , i am from Ecuador and i am very interested in your classes and products, my dream is to start my own bakery business focusing on decorated cakes, cupcakes, cookies and cake pops, but i am a beginner i have to begin from scratch, i am planning to travel to darien to the wilton school but my concern is that i dont have much time cause i am a single mom, my question is if you have intensive courses or which courses should i take in order to learn as much as possible of decorating to start my own business, i dont have any problem taking classes for a Whole month in which my mom Will help me with my daughter

    Please give me advice of which courses to take in order to achieve my dream.

    My suggestion is to go to our website http://www.school.wilton.com and see what classes you are interested in for the month that is best for you. Usually most students like to sign up for Master’s, Intro To Gum Paste, Intro To Modeling or Rolled Fondant and whatever classes start the week before as well as the week after Master’s. That would give you the entire month you are willing to attend classes. Also, we mention where you might want to stay while you are attending classes. The Marriott Towne Place Suites in Lombard offers a free shuttle to and from the school which might be convenient and you would not need to rent a car. New this year are Baking Classes, so be sure you check the website for those classes also. At my Michaels store yesterday, where I go frecuently, the manager ask if I was interested in become a certify wilton teacher. He told me to come to your site and find out. You will find it very convenient to use the calender whereby you can pick and chose what will be most beneficial to you. Pick a Master Course in the month that you would like to travel to the school and select classes before and after that Master that you will benefit from. We have 3-day baking programs where you will learn how to make 4 different cake recipes + fillings and buttercreams. I think those programs will provide you with a very nice well-rounded education + so many others. Hope to see you soon.

    I am one of your avid follower, I am interested to enrol early next year of 2015 during my vacation break in your master course. I am from philippines but I based here in Europe as of now. I have my uncle from Illinois just 15 minutes away from wilton school where im going to stay for my entire schooling.
