Okay … it’s confession time. Despite the fact that I’ve been baking since I was a little kid, and I’ve been developing baked good recipes my entire career AND I’ve worked in the Wilton test kitchen for over 9 years, I’m not really a cake decorator.

I have been decorating cakes for awhile now. Whenever I decorate fondant-covered cakes I’m usually asked, “how do you get the fondant so smooth?” It does take some practice, but having one specific tool on hand makes it so easy – the fondant smoother. (more…)

The Wilton tradition of cake decorating dates back to the late 1920’s when McKinley Wilton started to teach Pulled Sugar to European Chefs and Culinary Artists, and he in turn, learned the time honored European pastry techniques.
