Recently, Wilton held its first ever ‘Sweet-Up’ with several Facebook fans and Twitter followers. As part of that event, the attendees toured Wilton’s Decorating Room and participated in a ‘question and answer’ with Steve Rocco, Senior Director of Cake and Visual Design.

I want to make a bouquet of mini cup cake stand on a 1/2 sheet cake without falling, how would you suggest me? I was thinking about using cookie sticks, but not sure if they would stay in place. Help please
Monique, you can support the cupcake stand by using a plastic round separator plate on the cake top supported by plastic or wooden dowel rods below. Or you can also use 2 cake boards taped together covered in foil or fondant and place this on your cake top with dowels supporting the board. Do not place the cupcake stand on the sheet cake until you placed your cake at the reception or on a serving table. Hope this helps.
Im very new to baking but I love to bake. I want to start a business of cake decorating. I can do buttercream but thats it for now. Pls I need your advice. Thanks.
Lisa, if you’d like to expand your business you might want to explore new techniques in a range of media from royal icing, to fondant, and gum paste. how can i make the impression mat design on buttercream cakes some people don’t like fondant but want the same diamond shape on the buttercream cakes, can it be done? do you have a video on this.
Sylvia, our decorating room suggested that you may have to cut the mat to do this but you could press it against the buttercream on the cake, or make your own pattern and transfer it onto your cake then overpipe the pattern. http://www.wilton.com/decorating/patterns/transferring-patterns.cfm Hope this helps.
