Bake and cool Barbie cake and half round cakes
(bake four 2 in. high layers for a 4 in. high cake). Tint
140 oz. fondant light rose; prepare and cover round cake; reserve any remaining fondant. Prepare for stacked construction.
Position Barbie cake on foil-wrapped board. Use tip
3 to outline v-neck on shirt. Fill in shirt with tip 16
stars; sprinkle with pink sparkling sugar, then lightly
with lavender colored sugar. Fill in head and neck
with tip 16 stars. Position facemaker. Pipe tip 17 hair.
Make hearts and letters. Tint remaining fondant
darker rose. Roll out 1/4 in. thick. Cut desired letters
with cookie cutters. Cut hearts with small, medium
and large Cut-Outs. Brush with piping gel; sprinkle
with sparkling and colored sugar. Attach to cake
top with damp brush. For earrings, shape two white
fondant logs, 1/8 in. x 5/8 in. long. For each earring,
shape one large teardrop 1/2 in. long and four small
teardrops from dark rose fondant. Attach large
teardrop to end of white log and small teardrops to
sides with damp brush. Attach earrings to cake with
dots of icing.
On round cake, pipe tip 22 shell bottom border. Cover
shells with a row of tip 127D ruffles. Add two more
rows of ruffles above the first, 1/2 in. apart. Pipe tip 3
dots on cake side.
The star tip creates the most celebrated, easily accomplished decorations! The serrated edges of the star tip make ridges in the icing as you squeeze it out. Because fill in requires so much piping from the same bag, keep replenishing icing in bag.
