Step 1

3 days in advance: Make heart topper. Tint 16 oz. gum paste orange. Roll out 1/8 in. thick. Use pattern and knife to cut out heart; reserve remaining gum paste. Let heart dry 24 hours on cornstarch-dusted surface. Flip over and let dry another 24 hours.

Step 2

Also: Make scallops for cake pedestal. Roll out gum paste 1/8 in. thick. Use pattern and knife to cut nine scallops. Place scallops under storage board flap. To shape scallops, dust cake pedestal lightly with cornstarch. Center 8 in. cake board on cake pedestal. Using cake board as a guide, position 1 in. of scallop ends on pedestal plate, then bend down scallops to drape down from pedestal. Let dry on pedestal for 2 days, then remove.

Step 3

And: Make jewels. Use jewelry mold and white fondant to make 252 square gem backs and 104 round gem backs. Tint 2 oz. fondant each light blue and light green. Use jewelry mold to make 126 square gems in white and 63 each in blue and green. Use jewelry mold to make 52 round gems in white and 26 each in blue and green. Paint 126 of the square and 52 of the round gem backs with gold Pearl Dust/lemon extract mixture; paint remaining backs with silver Pearl Dust/lemon extract mixture. Let dry. Paint 26 of the white round gems and 63 of the white square gems with orchid pink Pearl Dust/ lemon extract mixture and remaining white gems with yellow Pearl Dust/lemon extract mixture. Brush blue and green gems with matching color Pearl Dust only. Attach pink and yellow gems to silver backs and blue and green gems to gold backs with piping gel. Let dry. Attach nine round gems to each scallop, alternating back colors.

Step 4

And: Complete heart topper. Bend lollipop stick to follow curve of heart topper; attach with melted candy, leaving 4 in. extended to insert in cake. Chill until set. Attach round gems to heart topper with piping gel.

Step 5

Bake and cool 2-layer cakes (trim layers to 2. in. for 5 in. high tiers). Prepare cakes for stacked construction. Ice smooth in orange.

Step 6

Attach two rows of square gems to top and bottom edges of cakes with icing, alternating backing colors. Attach scallops to cake pedestal with piping gel, positioning ends against base of cake. Carefully trim if needed.

At party: Insert topper in cake.
