Dip apples. Melt light cocoa and dark cocoa Candy Melts candy, separately, according to package directions. Use tongs to dip slices into melted light cocoa or dark cocoa candy, about 2/3 deep. Tap to smooth and remove excess candy. For drizzled apples, place wedges on parchment paper-covered cake board. Chill until firm, about 3 to 5 minutes. For other apples, immediately decorate following instructions below.
Drizzle apples. Melt white Candy Melts candy according to package directions. Use drizzling tip and decorating bag to drizzle apples with melted white candy. Let set, about 3 to 5 minutes.
Decorate walnut and Sugar Pearl apples. Dip wedges in crushed walnuts or use tweezers to attach white Sugar Pearls. Place on parchment paper-covered cake board. Chill until firm, about 3 to 5 minutes.
