Step 1

In advance: Make animal cookies. Prepare and roll out dough. Use cutters from set to cut giraffe and 1 each lion, zebra/horse, rhino, hippo, gorilla, snake, alligator (use lizard cutter, cutting off 2 top feet). Bake and cool.

Ice and decorate cookies. To ice cookies, outline using tip 3 and full-strength color flow (omit tail area on zebra); flow in using thinned color flow. Decorate animals on waxed paper using full-strength color flow.

For all: Pipe tip 1 or 2 dot eyes, pupils and nose/ nostrils, outline mouths. Let dry on waxed paper-covered boards.

For giraffe: Use tip 2 to outline and fill in spots; pat smooth. Pipe tip 2 pull-out tail tip. Pipe tip 2 outline ear and tail.

For rhino: Use tip 2 to outline and fill in horns and inner ear. Pipe tip 2 tail and details.

For lion: Pipe tip 2 outline tail and ear; fill in inner ear (pat smooth). Pipe pull-out mane, claws and tail tip. For gorilla: Pipe tip 2 outline details at tummy and leg. For hippo: Use tip 2 to fill in inner ear; pat smooth. Pipe outline tail and details.

For zebra: Use tip 2 to pipe pull-out mane (alternate colors), outline and fill in stripes (pat smooth) and outline tail with tip 2 and pull-out tip.

For snake: Add tip 2 dots.

For alligator: Pipe tip 2 zigzag scales and pull-out teeth.

When dry, attach 2 Lollipop Sticks to back of each animal (except snake and alligator) using melted candy; allow 1 1/2 in. to extend at bottom to insert into cake.

Step 2

Make leaves and trees. For leaves, tint 10 oz. fondant medium green; knead in 1 teaspoon Gum-Tex. Roll out 1/16 in. thick. Cut 24 large and 40 medium leaves using Cut-Outs. Use veining tool from set to mark details. Let dry 24 hours on large Flower Formers dusted with cornstarch (position 22 medium leaves inside Flower Formers to use around cakes).

For trees, tint 4 oz. fondant brown. Roll out 1/16 in. thick. Cut 5 x 1 in. strips to cover top 5 in. of each dowel rod for tree trunk; smooth with hands. Use veining tool to add details. Set trunks and leaves for tops in refrigerator to chill 3-5 minutes to help candy set faster. Assemble trees using melted green candy. Attach 3 medium leaves first; let set. Add 3 large leaves; let set.

Tint 36 oz. fondant medium green. Roll out half 1/8 in. thick. Cover top of plates. Position cakes on plates.

Step 5

Roll out remaining medium green fondant 1/8 in. thick. Cut 2 in. high strips to wrap around cake sides: 21 in. long for 6 in., 27 in. for 8 in., 34 in. for 10 in. cake. Cut wavy top edge 3/4 to 1 1/2 in. high. Attach strips to cake sides using damp brush.

Step 6

Use buttercream to pipe tip 16 pull-out grass; attach 22 medium leaves.

For ponds, roll out white fondant 1/8 in. thick. Cut wavy shapes: 2 x 4 in. for 6 in. cake, 5 1/2 x 3 1/2 in. for 8 in. cake, 5 x 4 in. for 10 in. cake; attach to cake tops.

For waterfalls, cut a cake board into 2 strips, 2 1/2 in. wide, 5 and 6 in. long. Curve slightly. Brush with Piping Gel and wrap with fondant strips, 5 in. wide, 5 and 6 in. long.

Tint 4 oz. fondant gray. Roll about 50-55 assorted rocks, 3/8 to 3/4 in. diameter and attach to sides of waterfalls and ponds using damp brush.

Step 7

At Party: Position plates on stand. Position waterfalls; cover with tinted Piping Gel for water. Insert animals and trees; attach alligator and snake to sides with icing.
