Give Dad a Clue on Mother’s Day
Dad, want a lovely way to surprise Mom on Mother’s Day? You and the kids bake her a batch of blueberry muffins for breakfast in bed.
Here’s the set-up: First, let Mom
sleep in on Mother’s Day. Next, get the kids breakfast, then everyone pitches
in to whip up a batch of Very Berry Muffins for Mom. They start with blueberry
muffin mix—the mix makes baking a snap—and finish with orange zest (the grated
peel of orange skin) and fresh or frozen raspberries. Let the kids help with
the mixing and stirring.

Makes 6 muffins
1 package (7-8.5 oz.) blueberry muffin
mix
Ingredients
to prepare muffin mix
½ teaspoon grated orange zest
½ cup fresh or frozen raspberries
(do not thaw berries if frozen)
Preheat oven to 400°F.
Spray Silly-Feet! Silicone Baking Cups with vegetable pan spray or line
standard muffin pan with baking liners.
In large bowl, blend muffin mix with ingredients needed to
prepare mix; mixture will be slightly lumpy.
Gently stir in orange zest and raspberries; spoon into prepared baking
cups.
Bake 18-22 minutes or until toothpick inserted in center
comes out clean. Cool in baking
cups. Serve warm or at room temperature.
