Step 1

In advance: Make globe pillar graduate. Tint fondant: 4 oz. copper, 2 oz. brown, 1/2 oz. yellow. Add 1/4 teaspoon Gum-Tex to 1 1/2 oz. white fondant. Roll out 1/8 in. thick. Cut a 2 1/2 x 2 1/2 in. square for mortarboard. Reroll fondant 3/8 in. thick. Use medium round Cut-Out to cut cap base. Let dry 24 hours on cornstarch-dusted board.

Step 2

For head: Tape top hole of globe closed. Roll out copper fondant 1/8 in. thick. Cut a 6 in. circle. Brush globe with Piping Gel and smooth on fondant to cover; cut fondant away from bottom hole. For hair, roll out brown to 1/8 in. thick. Cut assorted strips 1 1/2 to 3 in. long and 1/4 to 3/8 in. wide. Attach in layers to create hair-do. Roll and attach tiny ball nose and flattened ball cheeks. Use FoodWriter to draw dot eyes and outline smile. Attach cap base and mortarboard. For tassel, roll a 1/4 x 2 in. long log. Flatten one end and cut slits for fringe. Roll and attach a small ball for top button; wrap thin strip around fringe for knot.

Step 3

For body: To create a cone shape, roll a 7 x 1/2 in. diameter fondant log and wrap around bottom of globe, attaching with Piping Gel. Roll out white fondant 1/8 in. thick; cut a 6 in. circle. Cover globe with circle. Cut fondant away from holes. Cut and remove fondant for a 3/4 in. deep V-neck; cut and insert copper fondant. Roll out some white to 1/16 in. thick. Cut two 1/2 x 3/4 in. long lapels; attach using damp brush. Shape 1 x 2 in. long sleeves; attach. Roll out some white to 1/8 in. thick. Cut 1 x 1 1/4 in long strip; roll up for diploma. For hands, roll 1/2 in. diameter balls; flatten slightly and cut slit for thumb. Attach diploma and hands. Let graduate dry on cornstarch-dusted board. Slide onto pillar at party.

Step 4

Bake and cool 2-layer cake. Ice smooth. Divide cake into 10ths. Pipe tip 21 rosette border, piping three rosettes between each mark. Pipe tip 3 dot in center of each rosette. Pipe tip 2 drop strings below each group of 3 rosettes; make one 1 in. deep and one 1 1/2 in. deep. Cover drop strings with tip 3 dots. Pipe tip 5 bead bottom border. Trim pillar to 8 1/2 in. high; insert in center of cake. Slide on graduate.
