Step 1

2 DAYS IN ADVANCE

Make star. Knead 1 teaspoon Gum-Tex into 6 oz. black fondant. Use 9 in. fondant roller with purple guide rings to roll out 1/8 in. thick. Use knife and star pattern to cut out star. Let dry 48 hours on cornstarch- dusted board.

Step 3

1 DAY IN ADVANCE

Bake and cool 6 in., 8 in. and 12 in. square cakes. Cakes are 5 in. high (three layers; make two 2 in. layers and one 1 in. layer). Prepare buttercream icing following recipe directions. Use spatula to ice cakes smooth. Prepare for stacked construction. Stack cakes on prepared base board.

Roll out black fondant 1/8 in. thick as needed. For 6 in. cake, cut four rectangles 6 in. wide x 5 in. high. Use piping gel to attach to cake sides. Repeat using 8 in. wide x 5 in. high rectangles for 8 in. cake; 12 in. wide x 5 in. high rectangles for 12 in. cake.

Step 4

Prepare fondant trims. Use baroque fondant and gum paste mold and white fondant to make 70 small pearl chains; 24 leaves (12 in each direction); 40 large paisley swirls (20 in each direction); 48 medium paisley swirls (24 in each direction).

Place trims on cornstarch-dusted boards. Paint with silver Pearl Dust/ lemon extract mixture. Let dry, 15 minutes.

Step 5

Attach trims. Use damp brush to attach pearl chains around all black rectangles and on outer edge of star. Trim ends at an angle to miter corners and star points.

Use damp brush to attach center cake trims using same symmetrical pattern on all matching sides. For each 6 in. side, use two leaves, two large swirls and two medium swirls. For each 8 in. side, use two leaves, two large swirls and six medium swirls. For each 12 in. side, use two leaves, six large swirls and four medium swirls.

Step 6

DAY OF CELEBRATION

Complete star. Melt black Candy Melts candy according to package directions. Use melted candy to attach lollipop stick to back of star, leaving 5 in. extended at bottom. Chill until firm, 3 to 5 minutes. Insert star in cake top.
