Several days in advance: Make scrolls using patterns. Place large, medium and small scroll patterns on cake boards; cover with waxed paper. Lightly spray with vegetable oil pan spray; wipe off excess spray. Using tip 18 and royal icing, pipe 20 large and 60 each medium and small scrolls. Make extras to allow for breakage and let dry overnight. Turn scrolls over and overpipe backs; let dry overnight.
At reception: Assemble cakes on fondant-covered boards and Tall Tier Stand. Pipe tip 18 shell bottom borders. With buttercream, attach medium and small scrolls about 1 in. apart, in alternating fashion, on all cake sides. Attach large scrolls to columns with royal icing.
Always place a separator plate, or cake board cut to fit, on the cake where you position any figurine or topper. This protects both the cake and your keepsake. For extra stability, secure topper to the plate with double-stick tape.
