Tip 2 - How to get the perfect Mirror Glaze

Mirror glaze is a beautiful technique for glazing cakes and really adds the 'Wow' factor. The glaze starts as a very sticky and gluey liquid which sets as it cools. The gelatin transforms the glaze to create the mirror shine. This type of glaze tends to be very sweet, so some people like to adjust their recipe to taste.

Tie-Dye Candy Melt Mirror Glaze Cake

285g Bright White Candy Melts
1 tablespoon Wilton ‘White White’ Icing Colour
Wilton Gel Colours
360g Glucose
3 envelopes unflavored gelatin
cold water (divided)
250g sugar
160ml sweetened condensed milk

Tools required

Sugar Thermometer or digital Thermometer
Silicone Spatula
Cooling Grid (Wilton Expand and Fold)
Food Processor
Mesh strainer

Step 1
In a large bowl, stir together gelatin and cold water according to the packet instructions. Leave to sit for 5 minutes to bloom. Add sweetened condensed milk and chopped Wilton Candy Melts candy.

Step 2
In a saucepan, combine glucose, sugar, and 160ml cold water. Cook over medium heat, stirring until sugar dissolves. Continue cooking until mixture reaches 103º C. Pour hot sugar mixture over candy melt mixture. Stir to combine, then use an immersion blender or food processor to emulsify. Strain mixture through mesh strainer to remove any air bubbles. Divide mixture into 3 parts and add gel colour or Wilton Colour Right Base Colours to customise.

Step 3
Position cake on a cooling grid set over a sheet pan. Pour coloured mixtures over the top and down the sides of the cake, swirling together. Refrigerate cake until set, approximately 15 minutes. Gently remove from grid and place on serving plate. Decorate according to taste.

*Mix three separate colours for optimal effect.
**Add Wilton Treatology Flavor concentrates to flavour glaze.
Makes enough glaze for an 8 inch cake
