1940s Decade Cake: Strike Up The Band!


This big band fondant cake is a note-perfect celebration of the fabulous 40's swing band era! Check out the great detail on the trumpeter and trombonist 3-D toppers. It's easy to do using Wilton Shape-N-Amaze edible decorating dough and modeling tools. Step 1

Make gum paste support sticks 3 days in advance. Use 1 oz. gum paste and instructions to make seven support sticks for each musician: two for legs, 2 in. long; four for shoulders and hands, 3/4 in. long; one for neck, 2 in. long. Let dry 24 hours on cornstarch-dusted board.

Step 2

Shape-N-Amaze Edible Decorating Dough Amounts Needed For Figures: Make the following blocks in the sizing and blending tray before making each part of the 3D figures.

Trumpet: One yellow block, made in cavity #3 of sizing and blending tray

Trombone: One yellow block, cavity #4 in tray. One yellow block, cavity #1 in tray for valve tubes

Shoes: Four black blocks, cavity #4 in tray

Legs: Two black blocks, cavity #12 in tray

Torso: White, one cavity #10 block, one cavity #2 block, rolled together for each musician

Gray blended dough: White, one cavity #12 block, one cavity #5 block. Black, one cavity #1 block. Knead black and white together for all gray needed.

Jacket: One gray block, cavity #10 in tray

Neck Details: One white block, cavity #1 in tray. One red block, cavity #1 in tray.

Head: One natural block for each musician, cavity #12 in tray. Small amount of black for eyes.

Hair: One black block, cavity #6 in tray. One brown block, cavity #5 in tray

Hands: Four natural blocks, cavity #1 in tray

Arms: Four gray blocks, cavity #4 in tray

Step 3

Make trumpet 2 days in advance. Roll yellow block into a log, 7 in. long x 1/4 in. dia., tapering to 1/8 in. at one end. For trumpet opening on wider end, use small ball tool from set to create flared opening, 3/8 in. dia. Shape log into a loop to create trumpet shape. Trumpet opening should extend 1/2in. and mouthpiece should extend 3/8 in. from loop on opposite sides.

For valve tubes, use fondant roller with purple guide rings to roll out yellow edible decorating dough 1/8 in. thick. Use knife tool from set to cut three strips, each 3/4 in. long x 1/8 in. wide. Use lifter tool from set to mark indent 1/16 in. from one end for valves. Use brush to attach strips together and then attach to trumpet. Let dry 24 hours.

Step 4

Make trombone also 2 days in advance. Roll yellow block into a log, 9 1/2 in. long x 1/4 in. dia., tapering to 3/16 in. dia. at opposite end. For trombone opening, use small ball tool to create flared opening, 5/8 in. dia. Shape log into two curves to form trombone. Make first curve 2 1/2 in. from mouthpiece end, make second curve 3 1/2 in. from first curve. Space sections 1/2 in. apart.

For hand braces, roll yellow block into a log, 1/8 in. dia. Use knife to cut four pieces, each 1/2 in. long. Use damp brush to attach between curved sections of trombone. Place trombone upright, supporting flared opening with crumpled paper napkins. Let dry 24 hours.

Step 5

Make musicians? shoes and bodies also 2 days in advance. For each shoe, flatten and shape black block, rounding ends.

For each pair of legs, roll black block into a log, 5 in. long x 3/4 in. dia. Fold log in half and flatten at fold for waist area. Use large ball tool to create flared opening at each end. Use damp brush to attach shoes to legs. Shape a slight bend at center of trombonist?s legs. Insert two 2 in. gum paste support sticks in waist area of legs, leaving 1 in. extended.

For each torso, roll one cavity #10 and one cavity #2 white block into a ball. Shape torso, 1 1/2 in. high, 1 in. wide at bottom and 3/4 in. wide at top. Use damp brush to attach torso to legs. Insert a 2 in. gum paste support stick in neck area, extending 1 in. from top for head. Prop musicians upright against a flat-sided box. Let dry 24 hours.

Step 6

Make jackets, jacket details and neck details 1 day in advance. For jackets, use fondant roller with pink guide rings to roll out gray block 1/16 in. thick. Use knife tool to cut a rectangle 4 3/4 in. long x 2 in. wide. Wrap around torso, overlapping about 1/2 in. in front. Use knife tool to cut overlapping ends at an angle for neckline, starting 1/2 in. from bottom. Use damp brush to attach jacket to torso. Use scissors tool to trim off excess gray dough at shoulders and reserve.

For jacket details, use scissors and reserved gray dough to cut four rectangles, 7/16 in. long x 1/8 in. wide, for pocket flaps. Cut lapels to fit along angled edge of jacket, about 1 1/2 in. long x 3/8 in. wide and tapering at each end. Cut triangle notch, about 1/4 in. deep. Use damp brush to attach lapels and pocket flaps. Use small straw tool to mark five front buttons.

For neck details, use fondant roller with pink guide rings to roll out white block 1/16 in. thick. For each collar, use knife tool to cut one rectangle, 1 1/2 in. long x 1/4 in. wide. Use damp brush to attach around neck, leaving an opening in front for bowtie. For each bowtie, roll out red block 1/16 in. thick. Use knife tool to cut tie, 1/2 in. long x 1/4 in. wide. Use small straw tool to mark knot. Use damp brush to attach to neck.

Step 7

Make head and hair also 1 day in advance. For each head, roll one natural block into a ball. For trumpeter, use round pick tool to make hole for mouth. Use knife tool to mark wrinkles around mouth and eyes. For eyes, use black dough to roll two balls, each 1/8 in. dia.

For trombonist, use small dog bone tool to make indent for eyes. Use knife tool to make hole for mouth and mark wrinkles around eyes and mouth. For two noses use natural dough to roll a ball, 3/16 in. dia. Use damp brush to attach nose to head.

For trumpeter?s hair, use fondant roller with pink guide rings to roll out brown block 1/16 in. thick. Use straight side of round cut-out ?C? and brown dough to cut circle. Use knife tool to cut notch in front. Use round pick tool to mark part. Use sharp pick tool to mark lines in hair. For trombonist?s hair, use hands to flatten and shape black block into a circle, about 2 in. dia. Flatten slightly on sides and back. Style as for trumpeter?s hair.

Step 8

Make arms and hands also 1 day in advance. For each hand, roll a natural block into a ball. Flatten and shape into an oval. Use knife tool to cut slits for fingers. Shape hands around instrument in desired position. Use damp brush to attach hands to instrument. Use brush and gold Pearl Dust edible accents/lemon extract mixture to paint instruments, leaving mouthpieces unpainted. Insert a 3/4 in. gum paste support stick in each hand.

For each arm, roll a gray block into a log, about 2 in. long. Use small ball tool to indent one end for hand. Slightly flatten one side at top for shoulder area. Use knife tool to mark inside elbow area and bend arm. Position arms to hold instruments. Insert a 3/4 in. gum paste support stick into shoulder.

Lay musicians flat. Use damp brush to attach arms to musicians, hands to arms and mouthpieces to mouths. Use crumpled paper napkins to support arms. Let dry for 8 hours.

Step 9

Make cake top record also 1 day in advance. Use 9 in. fondant roller with purple guide rings to roll out black fondant 1/8 in. thick. Use knife and 8 in. cake circle as a guide to cut circle. Place circle on cornstarch-dusted turntable. Use sharp pick tool to mark grooves, starting on outside edge and spiraling into center. Turn turntable as you go to create even marks. Use brush and black Sparkle Gel to paint record.

For label, use fondant roller with pink guide rings to roll out a 1 1/8 in. dia. white fondant ball 1/16 in. thick. Use straight side of round cut-out ?A? to cut circle for label. Use brush and gold edible accents/lemon extract mixture to paint label. Position label in center of record. Use narrow end of tip 12 to cut hole in center. Let dry for 8 hours on cornstarch-dusted board.

Step 10

Make musical notes and stars also 1 day in advance. Use fondant roller with pink guide rings to roll out white fondant 1/16 in. thick. Use patterns to cut three of each note. Cut extras to allow for breakage.

For stars, use straight side of star cut-outs ?E? and ?F? to cut five stars in each size. Let notes and stars dry for 8 hours, on cornstarch-dusted board.

Step 11

Make layered cake. Prepare batter following recipe directions. Bake and cool two 8 in. cake layers, 2 1/2 in. high.

Prepare buttercream icing following recipe directions. Place cakes on cake boards, cut to fit. Prepare, fill and stack cakes for 2-layer cakes, 5 in. high. Use spatula and icing to ice cakes lightly.

Step 12

Cover cake with fondant. Use fondant roller with purple guide rings to roll out red fondant 1/8 in. thick. Cover cakes with red fondant.

Step 13

Assemble cake. Prepare thinned fondant adhesive following recipe directions. Use brush and thinned fondant adhesive to attach notes and stars to side of cake.

Insert a 4 in. lollipop stick in bottom of each musician?s legs, leaving 3 in. extended at bottom. Insert musicians in cake.
