Step 1

Make 20 tip 131 drop flowers with tip 4 dot centers. Ice cake sided and lightly ice cake top smooth. With toothpick, mark candle and "cake." Ice background area brown, candle gold and "cake" pink.

Step 2

Outline candle and face with tip 4 strings. Add tip 4 dot eyeballs. Pipe tip 12 bead-motion flame (flatten with finger dipped in cornstarch). Add tip 12 bead melting wax.

Step 3

Print tip 3 and 4 messages. Outline "cake top" with tip 18 shells; "base" with tip 21. With toothpick, mark 1 1/2 in. scallops on "cake." Attach flower garland with dots of icing. Add tip 349 leaves. Edge cake base with tip 21 shell border.

Drop flowers are a great way to add flowers quickly. Pipe drop flowers in buttercream directly on your cake, or pipe in royal in advance and place your flowers anywhere. Flowers will be sharper in definition when piped in royal.

The Shell is the most popular icing technique of all. It's the basis for many borders, fleurs de lis and more. Lift the tip only slightly when piping to avoid a bumpy look.

A variety of leaves will help give your cakes a more realistic garden feel. Add piping gel to your icing to help keep your leaves from breaking.
